- Salt to taste
- 2 tablespoons of ghee or oil
- 2 cups of water
- 1/2 cup of fried onions
- 1/4 cup of cilantro, chopped
- 1/4 cup of mint leaves, chopped
- 1/4 cup of raisins
- 1/4 cup of cashews
- 1/4 cup of almonds
- 1/4 cup of pistachios
Instructions:
- Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
- In a large pan, heat ghee or oil over medium heat. Add the sliced onions and fry until golden brown.
- Add the ginger and garlic and fry for 1-2 minutes.
- Add the chicken and fry until it is no longer pink.
- Add the tomatoes, yogurt, biryani masala, turmeric, cumin, coriander, red chili powder, and salt. Cook for 5-7 minutes.

- Preheat the oven to 350°F (175°C).
- In a separate pan, fry the cashews, almonds, and pistachios until golden brown. Remove from pan and set aside.
- In the same pan, fry the raisins until they puff up. Remove from pan and set aside.
- Once the rice is cooked, transfer it to a large oven-proof dish.
- Sprinkle the fried onions, cilantro, mint leaves, cashews, almonds, pistachios, and raisins over the top of the rice.
- Cover the dish with foil and bake in the oven for 10-15 minutes.
- Remove from the oven, fluff the rice with a fork, and serve hot.
Note:
This recipe can also be made with lamb, beef or shrimp instead of chicken. Vegetarians can use the same recipe with veggies like Paneer, Cauliflower, and Eggplant.
