 Here is a recipe for chicken biryani, a popular and delicious dish:

Ingredients:

  • 2 cups of basmati rice
  • 1 lb chicken breast, cut into small pieces
  • 2 onions, finely sliced
  • 3 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, finely chopped
  • 1 cup of yogurt
  • 2 tablespoons of biryani masala
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of red chili powder
  • Salt to taste
  • 2 tablespoons of ghee or oil
  • 2 cups of water
  • 1/2 cup of fried onions
  • 1/4 cup of cilantro, chopped
  • 1/4 cup of mint leaves, chopped
  • 1/4 cup of raisins
  • 1/4 cup of cashews
  • 1/4 cup of almonds
  • 1/4 cup of pistachios


Instructions:

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a large pan, heat ghee or oil over medium heat. Add the sliced onions and fry until golden brown.
  3. Add the ginger and garlic and fry for 1-2 minutes.
  4. Add the chicken and fry until it is no longer pink.
  5. Add the tomatoes, yogurt, biryani masala, turmeric, cumin, coriander, red chili powder, and salt. Cook for 5-7 minutes.
  6. Drain the rice and add it to the pan. Mix well.
  7. Add the water and bring to a boil. Reduce the heat to low, cover and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
  8. Preheat the oven to 350°F (175°C).
  9. In a separate pan, fry the cashews, almonds, and pistachios until golden brown. Remove from pan and set aside.
  10. In the same pan, fry the raisins until they puff up. Remove from pan and set aside.
  11. Once the rice is cooked, transfer it to a large oven-proof dish.
  12. Sprinkle the fried onions, cilantro, mint leaves, cashews, almonds, pistachios, and raisins over the top of the rice.
  13. Cover the dish with foil and bake in the oven for 10-15 minutes.
  14. Remove from the oven, fluff the rice with a fork, and serve hot.


Note:

This recipe can also be made with lamb, beef or shrimp instead of chicken. Vegetarians can use the same recipe with veggies like Paneer, Cauliflower, and Eggplant.
